OF AN AFRO-INDIGENOUS GASTRONOMY IN SERRA DA BARRIGA AND THE SILENCING OF THE FOOD 

OF ITS DWELLERS.

 RESUMO

A presente pesquisa analisa a Alimentação na Serra da Barriga – Alagoas, a partir da criação do Restaurante Baobá Raízes e Tradições, fundado pela ialorixá Neide Oyá D’Oxum, tendo como recurso metodológico a análise do cardápio e memória tanto do restaurante quanto da ialorixá e a sua relação com a alimentação dos moradores sitiados do Parque Memorial Quilombo dos Palmares, os discursos produzidos em torno da sua comida, a reprodução de uma comida “afro-indígena” e “quilombola”. O trabalho problematiza as construções e diálogos entre a comida reproduzida no restaurante e a comida cotidiana dos moradores, sua comercialização turística em contrapartida ao silenciamento de seus agentes, os moradores locais. Para tanto, evidencia esses debates a partir de uma pesquisa etnográfica que teve como itinerário as narrativas produzidas pelos próprios moradores.

ABSTRACT

This research analyzes the Food in the Serra da Barriga - Alagoas, from the creation of the Restaurant Baoba Roots and Traditions, founded by the ialorixá Neide Oyá D'Oxum, having as a methodological resource the analysis of the menu of the restaurant and its relationship with food of the besieged residents of Quilombo dos Palmares Memorial Park, the speeches produced around their food, the reproduction of "Afro-indigenous" and "quilombola" food. The work problematizes the constructions and dialogues between the food reproduced in the restaurant and the daily food of the residents, its commercialization in exchange for the silencing of its agents, the local residents. In order to do so, it evidences these debates from an ethnographic research that had as itinerary the narratives produced by the residents themselves.
